Sometimes is nice to just cook something fancy for the one you love!!... I don't really believe in Valentine's day, as I think you don't need a specific day to remind someone that you love them. I believe it's more special when you do it unexpectedly, and what a better way to do that than with food!!!! Get excited I'll share my love recipe with all of you!!!!
Steak for 2
Ingredients:
For the steak:
• 2 x 150g sirloin or rib-eye steaks
• olive oil
• a couple of fresh rosemary leaves
• 1 clove of garlic, halved
For the peanut sauce:
• 50g roasted peanuts, shelled, skins removed
• 25g sesame seeds
• 1/2 teaspoon dried oregano
• 1/2 teaspoon cumin seeds
a few sprigs of fresh thyme, leaves picked
• 1/2 teaspoon of smoked paprika
• 1 clove of garlic, peeled and finely sliced
• 50ml extra virgin olive oil
• juice of 1 lime
• 1 fresh green chillies, stalks removed, seeds left in
sea salt and freshly ground black pepper
For the Mexican salsa verde:
• a small bunch of fresh coriander
• a small bunch of fresh mint, leaves picked
• 1 clove of garlic, peeled
• 1 fresh red or green chillies, deseeded
• 2 large spring onions, trimmed
• 1 tomatoes, roughly chopped
• juice of 1 lemon
Directions:
Take your steaks out of the fridge and let them get up to room temperature while you make your peanut sauce. Put a dry frying pan on a medium heat and toast the nuts and sesame seeds for a few minutes until lightly browned. Add the oregano, cumin seeds, thyme, Paprika and garlic and cook for another minute or so. On the food processor put the nuts mixture and then add extra virgin olive oil, lime juice, fresh chilli, salt and pepper, and 100ml of water. Whiz until shiny and smooth, then have a taste and adjust with a bit more salt, chilli or lime juice if needed.
For the salsa, chop a few of the coriander leaves, then the mint leaves, garlic,
chilli, spring onions and tomatoes until it’s all very fine. Remember to be careful and watch your fingers! Sprinkle over a generous pinch of salt and pepper, then add most of the lime juice and a bit of extra virgin olive oil. Mix everything together on a bowl.
Get a frying pan and turn the heat on. Season both sides of your steaks with salt, pepper and olive oil. Add the steaks to the pan (The pan has to be very hot) and turn every minute until cooked to your liking.
When the steaks are perfectly cooked to your liking, move them to a plate to rest for a few minutes. Cut them into 1cm thick slices, and serve with the 2 sauces. The most important thing you need to remember is to make it special!
