New Year's Resolution

With the beginning of a new year and the promise you make yourself to start from scratch all over again, no one can avoid making a new year's resolution. Mine was eating healthier with local ingredients. I have to say that for a while now, even if it takes me 20 min. to get to the St. Lawrence market, I promised myself I will go there every week. The quality and freshness of local ingredients is amazing, it really makes a difference in your cooking.
For a healthy eating style you have to have options!!.. and lots of options.. I remember that before started cooking I always ate the same type of salad, you know the one with tomatoes, iceberg lettuce & a drop or two of a store bought salad dressing. BORING!!!! Most of the people I know keep eating that kind of salads, that's why nobody likes them!!.. If you want to eat healthy, you can't keep eating that every day, you have to make it flavourful and interesting.
So if you want an advice from me!! don't be afraid to try different type of greens in your salads and play with flavour!!.. Once you start mixing veggies you'll find the fun in eating salads. So here, I share one of my discoveries.

Green Salad with Pomegranate Dressing

Ingredients:

Salad:

1 cup Arugula leaves
3 cups of Mixed Greens
4 Tomatoes
200 g Goat's Cheese

Dressing:

1 - 1/2 cups of Pomegranate Seeds
1/4 cup of olive oil
1/2 teaspoon lemon
salt and pepper

Directions:


Place one cup of Pomegranate seeds, olive oil and lemon in a blender. Pulse until ingredients are pureed. Strain through a fine sieve. Season with salt and pepper. Toss with greens, add the tomatoes and goat's cheese. Add more Pomegranate seeds to the top of your salad, it will give you one more layer of incredible texture as they will explode in your mouth.

Simple and Brilliant!!
